Toledo Cuisine:
Toledo's gastronomy has ancient roots and it still preserves its traditions. Sometimes its products remind us of a Velazquez' still-life. Tradition rules in a land of great cheeses and great game meats, the basic pillars of a cuisine that preserves the local flavour.
Toledo's cuisine has its roots in hunting and grazing. In it we can find dishes with all kinds of meats. Roast lamb and suckling pig are typical of this city, as well as lamb stew 'cochifrito' (with tomatoes, egg, saffron and white wine).
However, beyond doubt, the most emblematic dish is the Toledo-style partridge hotpot. Partridge can also be prepared in many other ways in Toledo, like for example with beans, opening up the great chapter of game meats that delights both Toledans and their guests.
Hare stews, rabbit stew, venison with sauce, wild boar, hotpots, meat stews and 'carcamusas' are part of the regional cuisine that adapts old dishes to suit modern tastes.
About the Area
The most important date in Toledo's calendar is Corpus Christi, which is celebrated nine weeks after Easter. This festival, which has centuries of tradition and has been declared of International Tourist Interest, has its culminating moment in a large and colourful procession winding through the historic centre of the capital of La Mancha.
There are many possibilities for accommodation in the city, although it is advisable to book well in advance at any time of year. One of the best options is the Toledo Parador, situated on the neighbouring Emperador Hill and from where you can get a wonderful view of the city.
Other interesting places in the province of Toledo are Talavera de la Reina, with its Collegiate Church of Santa María la Mayor; Ocaña, with its Gothic-Mudejar church of San Juan Bautista; Guadamur, with a beautiful castle; and Oropesa, whose 14th Century castle-palace houses the local Parador de Turismo.
In the south of the province, at the foot of the Montes de Toledo, is the Cabañeros National Park, a protected area that combines Mediterranean woodland in the mountains with meadows on the wide plains.
Attractions
Museo Sefardi - Calle Samuel Levi, Old Jewish Quarter. This museum is housed within the 14th Century Sinagoga del Tránsito. The artifacts in the museum include extracts from the Torah that are over 400 years old and some Sephardic wedding costumes.
Cathedral - Arco de Palacioz. This flamboyant cathedral dates from between 1226 and 1498. It boasts several paintings, including works from El Greco and Narcisco Tomé. The Spanish-Baroque building´s focal point is the Capilla Mayor, a Gothic Altarpiece that stretches to the ceiling.
Museo de Santa Cruz - 3 Calle Cervantes. This museum is not as swamped by tourists as many of the other spots. A few of El Greco´s works and some other art pieces are on display here in addition to some archeological finds from the surrounding area.
