Teruel Cuisine:

Roast lamb has become one of the best known dishes of Teruel's cuisine.  Another famous dish is the flame-grilled lamb chops, (also known as a la teja).  The whole lamb is used for a great number of recipes, like stuffed lamb legs, hollow brains (a sort of fritter made with brains and dough), breaded heads, madejas asadas, chiretas (dish of lamb's intestines stuffed with rice, bacon, parsley, cinnamon and black pepper) and brisket point sausage (stuffed with minced meat, pork loin and ham with onion sauce).

Teruel's best products are made from pork:  an excellent cured ham, with Designation of Origin that is famous all over Spain.  Pork is also used to make magnificent sausages, like bispo, chorizo (Spanish sausage cured with paprika), longaniza (a type of sausage) and black pudding made with rice and onions, which sometimes is sweetened with honey to make a delicious dessert.  In addition, Teruel has an extraordinary marinade, an ancestral recipe that the local folk preserve with zeal.

The results can be seen in the famous cazuelicas (little pots), traditional presentation that can also contain great foods like peasant's pot, flour porridge and garlic soup. This food, made with lots of love, reminds us of the homey, ancient stoves that blessed the old times.

About the Area

On the city's skyline stand very interesting Mudejar towers.  In Calle Nueva stands the tower of San Salvador, with its brick façade, double series of arches and rich decoration with ceramic details.

The tower of the church of San Martín (14th Century) and that of San Pedro are almost identical to it.  A chapel in the church of San Pedro refers to a famous story of lovers from Teruel.  The legend tells that in the 13th Century young Diego and Isabel died because of an impossible love affair.  Two sarcophagi with the carved figures of the lovers, by Juan de Ávalos, hold their mummified bodies.

In the streets where in earlier times the city walls stood, new surprises for the visitor appear, like the aqueduct of the arches a 16th Century building which crosses the ravine that cuts the city in two, or the picturesque Neomudejar Paseo del Óvalo.

On leaving the historic part, references to the more modern Teruel appear.  In the new part, it is worth going to the Fueros de Aragon Park, without forgetting to visit the modern Congress Centre and Dinopolis, a theme park about dinosaurs.

Attractions

Cathedral de Santa Maria de Mediavilla -  A guided tour of 13th Century Mujédar gem is truly worthwhile.  The brick tower is one of four Mujédar towers in the town.

Museo de Provincial - This museum displays the ethnographic and archeological heritage of the area.  The collection of archeological material dates back to Homo erectus.  The museum is situated in the 16th Century Casa de la Comunidad.
